Mmm...

A traditional ingredient in Mexican cooking, Huitlacoche, or Corn smut "is a disease of maize... Although it can infect any part of the plant it usually enters the ovaries and replaces the normal kernels of the cobs with large distorted tumors analogous to mushrooms.  These tumors, or 'galls', are made up of much-enlarged cells of the infected plant, fungal threads, and blue-black spores." (Ironically "fungal threads" was the name of my first band.) (That was a joke.)

Sounds wonderful doesn't it?  No...  no, it doesn't... but it is.  

Mmm...   They have it at a lot of places in the city but one place I've enjoyed it recently is at Xochitl where, if you ask me, they make everything yummy.
