Sweetbreads Was SO 2007


Offal is everywhere these days but the new offal is not aweful it's tongue. I see it popping up on menus everywhere. I have also had it twice in the last few weeks and it is quite delicious.

Often prepared with a sweet, to juxtapose the savory, the marriage is delightful.

I haven't had theirs but of course Ansill has it. They gots all the crazy meats.

Warning: Not for the faint-of-heart.
